Squirrel season is upon us once again and fried squirrel is always a favorite meal. Spicy Buffalo wings are always good as well and if you combine the two into one recipe, well you have mouth watering goodness that is simple to prepare.
skinned and quartered
2 cups seasoned flour
Vegetable oil to fill skillet ¼ inch deep
2/3 cup Frank’s RedHot sauce
1/2 cup cold butter
2 tablespoons white vinegar
1/4 teaspoon Worcestershire sauce
1/4 teaspoon cayenne pepper
1/8 teaspoon garlic powder
salt to taste
Clean squirrels and quarter the meat into four legs and back sections. Roll each piece in seasoned flour and set aside to rest and allow to set.
Heat oil in a skillet over medium heat. Place each piece into the oil and fry for eight to 10 minutes per side in a skillet covered with a lid.
Remove the lid and continue to fry the squirrel an additional five minutes per side or until the batter is set and crispy. Remove squirrel from pan and drain on a paper towel-lined plate. Once all the squirrel has cooked, place the pieces in a bowl with a tight-fitting lid or large zip-lock bag.
Mix all ingredients to make the Buffalo sauce in a bowl. Then pour the Buffalo sauce over the squirrel meat and shake to coat the pieces well.
Serve the Buffalo Squirrel just like you would hot wings, with ranch or blue cheese for dipping and a few celery sticks.
